Happy Easter!
Not a whole lot of activity planned for Mr Papa and family as most of our family lives a long distance away. Just a nice relaxing day taking in a movie, playing some boardgames and a nice feast. I am preparing a Prime Rib for dinner this evening with that mystical, never-fail recipe. Being an avid cooking enthusiast this one still gets me. You simply take the Prime Rib, stick in the oven for 1 hour at 375 degrees. At that time, turn off the oven and do not open the door. 2 hours and 15 minutes later, simply turn the oven back on at 325 degrees and cook for 45 minutes. That’s it. And the magical part is that it works for ANY size Prime Rib. No more figuring out the weight, multiplying by some time per pound and then cooking. I have cooked Prime Rib for two with this method and for 20. It works perfectly every time.

New Holland America Master Chef’s Dinner

As an avid cruiser, I found the Holland America Cruise Line recent press release about their new Signature Master Chef’s Dinner interesting. We tend to favor Celebrity Cruises when we cruise and one of the reasons is the cuisine. I havent found another cruise line’s that compares to Celebrity’s. Being an avid cook myself, this is important. The daily 2 hour dinner in the main dining room is one of my favorite things about cruising. Dont get me wrong, I am not one to gorge myself on a cruise. I have yet to make a midnight buffet (whatever time they do them now) though I am usually up past midnight. But, the dinners are special. I even prefer the main dining room to those specialty restaurants.
Anyways, this new program has the whole hotel dining staff “putting on a show” while serving dinner once per cruise. Sounds fun and entertaining. I wil have to find some actual cruiser guests who have experienced the “show” and see what they thought.
