Perfect Prime Rib

Since I posted my Christmas Menu, I had gotten a few requests for my Prime Rib recipe. Its an old family recipe that quite honestly isnt anything special, except that it turns out perfect Prime Rib every time.

The first thing I need you to do is trust me on this one. This is going to seem unbelievable to you and you will have doubts. But, it does work. In fact, the following recipe works for any size Prime Rib (standing rib roast). I have used this recipe for Prime Rib for 2 people and for 20 people. It will work for any number of ribs. The directions are identical no matter the size of the Prime Rib.

This recipe needs to be started 4 hours before you want to eat. Preheat the oven to 375. Cook the Prime Rib for 1 hour and then turn off the oven. This is IMPORTANT! Do not open the oven. Leave it closed with the Prime Rib in it. 45 minutes before you want to eat, turn the oven back on at 325. After the 45 minutes, remove, slice and serve. The Prime Rib will be medium to medium rare. Before cooking you can season or rub the beef anyway that you desire.

I dont know how this works, but it does. I have cooked at least two dozen prime ribs and everyone has been perfect.

Well, thats it! Enjoy the Prime Rib! As its our traditional Christmas Eve meal, I do the initial hour cooking before leaving for Christmas mass and then have the oven auto turn back on so that the Prime Rib is done about the time we return from mass. I leave just enough time to prepare the rest of the meal. It couldnt be any easier.

Christmas Menu

Its that time of year again – Christmas.  That means time to cook up some good meals.  Being on NutriSystem, I dont get to cook that often anymore, but gonna do it for the holidays.

Its been a while since I have posted anything about NutriSystem.  Thats because of work travel, the Mexico Cruise and the holidays, I havent been doing all that well.  I believe I am still down 15 lbs but certainly not losing anymore.  I will hit it back hard after the first of the year and post some updates once again.  Its still working for me anyways. This year, I will prepare a nice dinner for Christmas Eve and then again for Christmas dinner.

In keeping with the Christmas Eve tradition in our house, I will prepare a Standing Rib Roast (Prime Rib).  We have gotten where we really enjoy that, its simple to make and tastes wonderful.  I will prepare a nice little French Red Wine and onion sauce to go over the Prime Rib.  Savannah has been asking me to make my Rosti or potatoe latkes, so that will accompany the Prime Rib.  To keep it simple, I will just add a mixed green salad with a raspberry vinaigrette.  Mass will be at 5:30 pm and the kids have a short play afterwards, so dinner wont be until about 8:00 pm and we cant take too much time as we open the family Christmas presents on Christmas Eve.  The morning is all for Santa’s gifts.

On Christmas Day, Suzanne has convinced me to make a Turkey.  I usually like to go another way but being as we were on our Mexico cruise at Thanksgiving, she wants a turkey.  It will also give us a chance to take the leftovers to eat in the New Mexico cabin.

The meal will consist of the Turkey with a Southwestern style rub on the turkey and stuffed with a wild mushroom stuffing.  You cant have a turkey without mashed potatoes, so I will prepare some bacon and buttermilk mashed potatoes.  To go on top of all that, I will make a shiitake mushroom gravy.  Since Suzanne loves to stuff herself and Thanksgiving and this is mimicking that meal, I will also add a southwestern cranberry sauce, green beans with walnuts and a nut bread.  Whew, thats gonna be a busy day.  Hooah!

Savannah has asked to be my assistant this year.  She is really getting into cooking and loves to help me.  She is pretty good help if I can keep her attention span long enough.  The cooking starts tomorrow.
